Select the best garlic cloves that you want to turn into minced dried garlic or powdered garlic. Avoid using bruised cloves, or greenish ones.

Peel them and garlic discard the papery skin.

Place the garlic cloves in a food processor and pulse for 45 seconds.

Lay out the garlic on a baking tray lined with parchment paper. Dry in oven at  a low temperature 90°C/180°F for 6 hours, turning from time to time.

I would not say a truism , but obviously the higher the temperature, the less time it will take. However, best results are reached with patience, low temperatures and a lot of time. Not properly dried garlic can be a little chewy. If it happens to you, prolong the drying times and you’ll solve the problem.

When garlic is completely dried, remove from the oven, and allow to cool down.

In food processor, mix the coarse salt with the dried  garlic. Process until combined, for at least 45 seconds.

Pour flavored salt over a baking sheet and spread into a large thin. Allow flavored salt to dry overnight.

Store in an airtight container in a cool dry place, you can use it for weeks…

Notes

You can use this flavored salt to season any dish: meat, fish, baked potatoes or french fries and, if you live in Transylvania, you can use it to ward off vampires: it just depends on your needs!
