Ingredients
- 16 oz 450 gr Linguine
- 16 oz 450 gr Green Asparagus
- 16 oz 450 gr Shrimps
- 2 medium 2 medium Shallots
- 3 oz 100 gr tomatoes
- 1 tablespoon 1 tablespoon or parsley if you prefer Thyme
- Extra Virgin Olive Oil
- Salt and Pepper to taste
Preparation
Wash the asparagus and deprive them of the white woody part.
In a tall saucepan, bring to boil 2 liters of salted water. Once to a boil, pour the asparagus, taking care that the tips are not completely immersed. Cook for 7-8 minutes and drain. Keep aside a cup of the asparagus stock in case your condiment is too dry…
Cut into the asparagus pieces, keeping the tips intact.
Meanwhile, in a nonstick saucepan, sauté the shallots , add the prawns, the tomatoes cut in halves for 4-5 minutes at low medium heat. Add the white wine and let evaporate. Finally add the asparagus tips. And turn off the heat.
Boil the linguine in salted water, following the cooking time on the box, drain. Pour the linguine in the condiment, and let them sauté for 2-3 minutes, adding , if necessary, a bit of asparagus stock.
Garnish with fresh thyme.
