Ingredients
- 1 lb 500 gr finely chopped Zucchini
- 10 leaves 10 leaves chopped fresh mint
- 2,5 oz 70 gr 00 Type White flour
- 2,5 oz 70 gr freshly grated Parmesan Cheese
- 2 eggs 2 eggs Eggs
- Salt and Pepper to taste
- to fry Olive Oil
Preparation
In a large bowl beat the eggs, add salt and pepper, flour, grated parmesan cheese and stir well to get rid of all the flour lumps.
Wash and chop julienne the zucchini, chop the fresh mint as well and add these ingredients to the egg mixture. Stir well. Don’t worry is the mixture might look a bit unpromising at first, if you keep going, you will end up eating ugly but delicious fritters.
Heat abundant olive oil in a non-stick frying pan over medium-hight heat. Add one tablespoon full of the mixture to the pan and cook for 2-3 minutes each side or until golden. Transfer to a paper towel to drain the exceeding oil and serve hot.

If you’re as big a soccer fan as I am, you’d know that there is always a match around the corner… this is the reason why it’s good to have some snacks around.
These zucchini fritters are a perfect appetizer to be shred during a soccer match with friends. They can be prepared in advance and heated on oven or microwave just before the match starts…
You can serve this fritters plain, or together with minted yoghurt or mayonnaise.
