Ingredients
- 3 medium 3 medium Zucchini
- 7 oz 200 gr Sausage
- 3 oz 80 gr Breadcrumbs
- 3 oz 80 gr freshly grated Parmesan Cheese
- 3 3 Eggs
- to fry to fry Seed Oil
- Salt and Pepper to taste
Preparation
Slice the zucchini longways into very thin fillets (you should get 16 of them). Pre-heat the grill and place the zucchini slices on the grilling surface, cooking for 2-3 minutes on each side.
Skin the sausage, and mix it in a large bowl with one egg and the freshly grated parmesan cheese. Use this mixture to make 16 meatballs.
Roll a zucchini fillet around each meatball.
Skewer 4 zucchini rolls together with a wooden skewers, you’ll get 4 skewers.
In a large bowl, whisk two eggs, adding salt and pepper to taste. In large tray, arrange breadcrumbs. Dip the zucchini skewers in beaten eggs, then dredge in breadcrumbs.
Fry skewers in flying oil for 4 to 5 minutes or until golden brown. Drain on paper towels.
Serve hot or warm sided with salad.
Notes
These zucchini skewers are really easy to make and tasty. You can enrich them in many ways, just adding some herbs to the sausage mixture. Very quick to prepare, you can prepare them in advance and re-heat them in the oven just before serving.
If you do not have sausage, you can use minced meat too. In this case, keep in mind that sausage in already seasoned with sale, pepper and herbs, while mince meat isn’t… So add a spicy touch to your meat…
